Birthday Cake: How to Make Unicorn Cake Recipe
My daughter is OBSESSED with RARITY, one of the main characters of My Little Pony Friendship is Magic. For her upcoming birthday party, she asked that I bake her a Rarity unicorn cake. Luckily, I have a few tricks up my sleeves and found the perfect recipe that is easy to make and perfect for moms on the go (like me).
Ingredients:
2 boxes of white cake mix
Ingredients needed for box mix (usually Vegetable oil, Eggs, Water)
4 Food colors or gels (you can use organic or all-natural if desired)
Nonstick cooking spray
All-purpose flour (for dusting pans)
2 to 3 containers store-bought buttercream frosting (you can make your own with butter, sugar, and milk if you’re feeling crafty!)
Blue/Pink/Colored tube decorating frosting

Preheat the oven to 350 degrees Fahrenheit. Spray four 8-inch round cake pans with cooking spray and dust with flour. Prepare the cake mixes in bowls according to the package directions, then add enough food coloring until you get the desired color.
Place the 4 differently colored batters into 4 prepared pans and bake according to directions, usually about 30 minutes. You’ll know it’s done when a toothpick comes out clean.
Let cool then remove from pans.
Cut the rounded tops from the cakes to make them flat. Frost your first cake layer with 1/2 cup frosting. Top with another cake and frost again. Add the third layer and frost again, then finish with last cake layer bottom-side up. For a buttercream, you usually do two coats of frosting. So first frost with a thin layer of buttercream, then place in the fridge to set for about 15 minutes. Remove cake from fridge, place on a cake stand and spread with remaining frosting for a gorgeously smooth cake!
Let your kids have fun creating the unicorn mane with decorating frosting! Top with the ears, eyes, and horn from the cake topper kit.
